BREWING A SUCCESSFUL BUSINESS RECIPE: PLACE REVIEW ON WOODY’S BREWING COMPANY – REDDING, CALIFORNIA

Within the current brewing industry, certain traditional principles remain relevant. Nonetheless, places such as Woody’s Brewing Company distinguish themselves as leaders, possessing the skill, perseverance, and ambition necessary to create outstanding beers that challenge conventions in a competitive market. As a family-run business guided by a strong dedication to quality, Woody’s Brewing Company symbolizes the highest standard of brewing and local cuisine in Shasta County and Northern California, areas known for their love of exceptional beer and food.

WOODY’S INITIAL RECIPE FOR BUSINESS SUCCESS

The story behind Woody’s Brewing Company in Redding, California is a tale of family unity, passion for craft beer, and dedication to excellence. It all began with a seasoned brewer with a deep love for creating unique and delicious beers that would leave a lasting impression on anyone who tasted them.

Creating a blueprint for a successful enterprise at the start requires essential components. For Woody’s Brewing Company, it all commenced with close familial ties playing a pivotal role.

The initial key element: Possessing a renowned brewer within the family.

Pat Wlodarczyk, the original Head Brewer, harbored a dream from a young age – to craft top-notch beers that would captivate the masses. His aspiration was to dedicate himself entirely to the art of brewing, a passion he had cherished for over 25 years. His unwavering commitment and boundless enthusiasm towards refining his brews never failed to astonish people. In 2009, Pat kickstarted his brewing journey on a 1bbl pilot brewing system, meticulously honing his skills ever since. Over the years, he has clinched numerous accolades for his brewing techniques, earning praises from distinguished judges and artisans worldwide.

Second ingredient: Recruit a relative with expertise in wholesale and direct-to-customer business operations.

Scott Wlodarczyk is a key figure at Woody’s, bringing a wealth of experience in the beer and wine retail and distribution sector. His journey began at Lucky’s Market in Sonoma County, where he delved into managing the beer and liquor department during the graveyard shift at a young age of 20. Progressing through the distribution hierarchy, Scott secured a position at Budweiser, marking the start of his tenure with prominent distribution companies across the West Coast. From Budweiser in Napa, California, to Columbia Distributing in Portland, Oregon, Scott eventually settled in Redding, serving as the Key Management Supervisor at Redding Distributing for 15 years. With extensive expertise in beer marketing and sales, Scott is a Certified Beer Server through the Cicerone® Certification Program, recognized for his profound knowledge and passion for the craft.

The third essential element: Enlisting a newly graduated family member with a business degree, driven and determined to take the necessary steps towards success.

Andrew Wlodarczyk, Woody’s Operations Manager, harbored ambitions of becoming a small business proprietor for as long as he can recollect. Growing up, he nurtured a vision of establishing a microbrewery. Some years back, he discovered that his uncle Pat and father Scott also shared this aspiration for many years. Realizing the importance of formal education in gaining professional credibility, Andrew pursued and obtained a Bachelor of Science in Entrepreneurship and Small Business Management from California State University, Chico. While this academic program equipped Andrew with theoretical knowledge and strategic insights essential for entrepreneurship, he acknowledged that the true learning experience commences when one starts taking concrete actions.

Together, the Wlodarcyzk family worked tirelessly to perfect their recipes, develop a strong brand identity, and create a welcoming atmosphere at their brewery. Woody’s philosophy of putting their unique twist on classic beer styles resonated with customers, who quickly became loyal fans of their inventive brews.

THE BREWERY

THE BEGINNINGS

Below the warm greeting, “WELCOME TO WOODY’S BREWING COMPANY Family Owned-Family Brewed-Finely Crafted,” visitors of Woody’s Brewing Company website are greeted by two significant words: Since 1984. This marks the beginning of the Wlodarczyk brothers’ (Pat and Scott) venture into brewing beer at home. This endeavor coincided with the legalization of homebrewing in the United States, which was still nascent at the time.

The rise of homebrewing sparked a wave of enthusiasts who eventually turned into professionals. While Scott delved into the wholesale and direct-to-consumer aspects of the beer industry, Pat dedicated the next 25 years perfecting his brewing skills and crafting award-winning recipes.

In 1996, after exploring various opportunities along the West Coast, Scott relocated with his family to Redding, harboring ambitions to establish a brewpub. Recognizing his brother’s brewing prowess as a valuable asset, Scott collaborated with Pat, who continued his journey towards becoming a professional brewer. In 2009, Pat upgraded to a 1bbl brewing system at home to further refine his recipes.

Parallelly, Scott’s son, Andrew, was pursuing studies in Business Management and Entrepreneurship at California State University in Chico during this period, culminating in his Bachelor of Science degree. Andrew’s expertise in business administration would play a crucial role in amalgamating the various elements together.

In 2013, leveraging Scott’s industry experience, Pat’s acclaimed beer recipes, and Andrew’s business acumen, the trio materialized their long-held aspirations. Thus, in 2013, Woody’s Brewing Company was brought to life.

THE NAME “WOODY’S”

Following my discussion with Scott on March 1, 2024, I inquired about the origin of Woody’s name. Scott revealed, “Growing up, our family name Wlodarcyzck posed pronunciation challenges as the ‘L’ is silent, pronounced as woo-dar-check.” A charming Polish family name, indeed. Consequently, the first two syllables (woo-dar) were adopted colloquially, leading to the endearing moniker “Woody” for both Scott and Pat. This nickname became an integral part of their identities, eventually inspiring the choice of “Woody’s” as their company name. Scott emphasized, “The simplicity and memorability of the name Woody’s have greatly benefited our business.”

CRAFTING FLAVOR: THE BREWERY JOURNEY OF WOODY’S BREWING COMPANY

When the time arrived to pinpoint an ideal venue for launching Woody’s Brewing Company, Scott, Pat, and Andrew pooled their expertise and set out on a quest to locate the perfect establishment. Their quest led them to the former Tapas Downtown Redding premises, which encompassed all the essential features the Wlodarczyk trio desired: a front dining area, ample space for a diverse beer tap bar, a well-equipped kitchen, and rear space designated for brewery operations and stock storage. Shortly after Tapas Downtown Redding closed in March 2014, the Wlodarczyk trio acquired the venue and commenced the transformation process into their envisioned brewpub.

In the process of transforming the building into their front-of-house brewpub and office space, Scott and Andrew took the lead, while Pat focused on laying the groundwork for Woody’s Brewing Company by experimenting with beer recipes in the designated brewery area. Throughout 2014, Pat tinkered with flavors using his pilot brewing system, envisioning the use of a 10bbl system to cater to future clients and local distribution needs.

To bring his vision to life, Pat enlisted the expertise of Premier Stainless Systems from Escondido, California to custom-design and manufacture a professional brewing system for Woody’s. Despite the project taking most of 2015 to complete, Woody’s grand opening on January 1, 2015 was met with enthusiastic patrons. Facing the challenge of meeting beer demand without their brewhouse, the Wlodarczyk’s secured a contract brewing agreement with Lassen Ale Works in Susanville. Pat collaborated closely with Lassen Ale Works to perfect the Woody’s beer recipes.

Once the brewhouse was installed at Woody’s, Pat had already curated a selection of acclaimed beer recipes ready to be brewed using their new system. The lineup included: Apricot Wheat (an American Wheat Apricot Ale), Hopzerker (a Traditional Double IPA), Nutty Woody (an English-Style Brown Ale – which bears an label image of Pat from 2014 stirring a yeast strain starter in a beaker), Pray for Powder Porter (an American Porter), Swheat Dreams (an American-style Wheat Ale), and Teacher’s Aide (an American Amber Ale).

In 2016, on March 15th, the newly installed brewhouse system was poised to create its inaugural test batch successfully. The subsequent day marked the official brewing of Woody’s first beer on their fresh 10bbl system, set to delight the eager public with its delectable brew in a short while. Pat’s long-held dream since 1984 had finally materialized.

WOODY’S BREWING PHILOSOPHY

Woody’s follows a straightforward brewing approach: They take traditional beer styles and add their distinct “Woody’s” twist to them. Striving for a blend of uniqueness and familiarity, their beer selection goes well beyond the standard 20 types of IPA’s commonly found in craft breweries. Offering a diverse range of brews, including Belgian-Style ales, German Pilsners, Oktoberfests, Hefeweizens, British and American Stouts, Porters, fruit-infused beers, and more, Woody’s attracts beer enthusiasts from near and far. Renowned for their commitment to balance and drinkability, Woody’s Brewing Company consistently explores new flavors and styles, earning recognition through awards and accolades. This dedication to excellence has established Woody’s as a premier brewery in Shasta County and the broader North State region.

FIERCELY INDEPENDENT

In the craft brewing sector, independence plays a crucial role, holding significance for both the brewers crafting the beer and the enthusiasts enjoying it. A study carried out by Nielsen on behalf of Brewbound revealed that terms like “independent” and “independently owned” strongly appeal to a large majority (81 percent) of craft beer consumers. There is a growing demand for distinction between products from small independent craft breweries and those from major beer corporations and acquired labels. Consumers seek transparency regarding the origins of their food and drinks.

The New Brewer’s Independent Craft Seal

Beer enthusiasts can now easily identify beers brewed by independently owned breweries with the newly introduced seal. This seal is accessible at no cost to over 5,300 small American craft breweries that possess a valid TTB Brewer’s Notice, adhere to the BA’s craft brewer definition, and have signed a license agreement. It is inclusive for both BA member and non-member breweries. Anticipate spotting this seal on beer packaging, displayed at various retailers, and featured in brewery promotional materials in the near future.

At Woody’s Brewing Company, each beer is meticulously crafted by a proud family-owned brewery that upholds its independent spirit.

ASSISTING NOBLE CAUSES THROUGH PHILANTHROPIC ENDEAVORS

Woody’s Brewing Company’s commitment to giving back to the local community through their specially brewed beers for worthy causes is truly commendable. By creating unique brews for specific charitable initiatives, they are not only raising awareness for important issues but also generating funds to support those causes financially. This proactive approach to philanthropy sets Woody’s Brewing Company apart as a socially responsible business that actively contributes to making a positive impact in Shasta County.

Through their fundraising efforts, Woody’s Brewing Company is able to sow financial seeds into various local causes, ultimately making a tangible difference in the community. Whether it’s supporting environmental conservation efforts, local charities, or community development projects, each special beer brewed by Woody’s becomes a representation of their dedication to creating a better place to live for all residents of Shasta County. By leveraging their brewing expertise and passion for craft beer, Woody’s is able to connect with beer lovers on a deeper level, inspiring them to support these causes while enjoying quality brews.

As Woody’s Brewing Company continues to brew for a cause and engage with the community through their philanthropic endeavors, they are not only enhancing their brand reputation but also fostering a sense of unity and collaboration within Shasta County. By prioritizing social responsibility and community support, Woody’s exemplifies the power of businesses to be agents of change and advocates for positive social impact. Their innovative approach to giving back through beer serves as an inspiration for other local businesses to follow suit and invest in making their communities a better place for all.

THE BREWPUB

When the time had come for Woody’s Brewing Company to launch its operations, Scott, Pat, and Andrew envisioned a distinctive and thrilling presentation of their beers.

They recognized that with the rise of food culture and the growing trend of pairing gourmet dishes with craft beers, Woody’s Brewing Company decided to develop a brewpub concept that would appeal to foodies and beer enthusiasts alike. They believed that the quality of the food and beer should be uncompromising, and that every dish should be expertly crafted to complement the flavors of their brews.

To achieve this vision, the owners worked closely with the kitchen staff to create a menu that highlighted the best of both worlds – delicious, innovative dishes paired perfectly with his handcrafted beers. The management team understood the importance of maintaining a strong relationship between the brewpub and the kitchen, so they made it a priority to involve the kitchen staff in every step of the process.

QUALITY WITHOUT COMPROMISE

The workers in the kitchen are passionate about their craft and love experimenting with new flavors and ingredients. Many of them are also avid beer enthusiasts, eager to learn more about the brewing process and how to pair different styles of beer with various dishes. This shared enthusiasm for beer and food creates a dynamic and creative atmosphere in the kitchen, resulting in dishes that are not only visually stunning but also incredibly tasty.

As word spread about Woody’s brewpub, foodies and beer lovers flocked to the establishment to experience the unique fusion of flavors that only Woody’s could offer. “When we created this brewpub, we wanted to make sure that the “foodies” were a big part of it. Of course, the beer compliments the food, and the food compliments the beer. We actually work with the staff back in the kitchen, whom most all of them enjoy beer. They understood our goal when we set out to do this.”

RATED BEST IN THE NORTH STATE

Woody’s Brewing Company has reaped the rewards of their unwavering commitment and hard work. Having commenced operations on January 1, 2015, they have consistently clinched the title of Best Brewery and/or Best Bar on BestoftheNorthState.com for the years 2016 through 2021.

BestoftheNorthState.com stands as a comprehensive platform that compiles authentic feedback from residents in the north state. Drawing feedback from local Redding newspaper Record Searchlight, the website curates ratings from the “Best Of the North State” segments and conducts personal interviews to gauge individuals’ encounters with various businesses and establishments. Leveraging social media, Best of the North State employs a robust evaluation process to establish a foundation of trustworthy reviews.

SEGMENT NOTE: Upon examining the segment titled ‘RATED BEST IN THE NORTHSTATE,’ Andrew Wlodarczyk, a company principal, expressed a desire to provide additional elucidation regarding the matter:

“We won Best Brewery year after year until 2021, including other various awards from the Best in the Northstate. When unbeknownst to us, or anyone they removed the categories (best brewery) that we had won awards in year after year. A request was made to Best in the Northstate as to why these categories were removed and received no response. Then subsequently Woody’s won best German Food (not nominated by ourselves) and then that category was removed the next year as well. I think we all still know who the best is and will continue to be.” 🙂

INTRODUCING KURT HEUER: WOODY’S HEAD BREWER

DESIRE BREWS WITHIN A SOLDIER: FROM MILITARY SERVICE TO BREWING AMBITIONS

Head Brewer Kurt Heuer at Woody’s Brewing Company had always known that brewing was his true calling. It all started during his time in the military, where he developed a deep passion for the art of crafting beer. The seed had been planted long before, as his father was an avid homebrewer and the Heuer family in Germany had a rich history of hop farming dating back to the 19th century.

In his explanation for choosing to pursue a career as a brewer, Kurt states “You could say becoming a brewer for me was in the blood.”

During his time at U.S. Army Garrison Ansbach in Germany, Heuer savored the taste of German beer. “I came across numerous small breweries and unique beers that were exclusive to the nearby villages. It was also my first encounter with growlers and refillable bottles,” Kurt added.

KURT EMBARKS ON HIS VENTURE IN THE REALM OF COMMERCIAL BREWING

Kurt embarked on his journey to becoming a brewer thanks to the support of the GI Bill after completing his service in the US Army. His brewing career kicked off at Eight Bridges Brewing Company in Livermore, California, where he benefited from their pioneering on-the-job training program for veterans. Under the mentorship of Eight Bridge’s brew master Justin Beardsley, Kurt dedicated nearly 2000 hours to refining his brewing skills.

While navigating his brewing apprenticeship, Kurt faced the typical tasks assigned to newcomers in a brewery such as cleaning kegs and sanitizing equipment. Despite yearning to step onto the brew deck, a pivotal moment came when he stumbled upon an article by Henhouse Brewery’s brew founder Collin McDonnell discussing the importance of starting from the ground up. This revelation shifted Kurt’s perspective and fueled his determination.

“You could say becoming a brewer for me was in the blood.”

Woody’s Brewing Company Head Brewer, Kurt Heuer

Over the years, Kurt immersed himself in the world of brewing, learning from experienced professionals and experimenting with various recipes. Following his tenure at Eight Bridges Brewing and further refining his craft at Wild Card Brewing Company in Redding, Kurt finally achieved his aspiration of becoming a head brewer and secured that position at Woody’s Brewing Company.

KURT AND HIS UNIQUE BREWING TECHNIQUE ARE WARMLY EMBRACED BY WOODY’S CLIENTELE

At Woody’s, Kurt’s brewing philosophy is simple yet profound. He believes in taking classic beer styles and putting his own twist on them, focusing on creating beers that are not only delicious but also highly drinkable. Instead of aiming to shock the senses with mega bold flavors, Kurt emphasizes balance and nuance in his creations.

Kurt’s early beer preferences were honed by the selection at Eight Bridges Brewery. Among the offerings were a house Pilsner, a Red Ale, and the ubiquitous IPAs of the time, before the rise of the popular Hazy IPAs. One of Kurt’s most famous creations is his Celia’s Mexican Chocolate Stout, which originated during his stint at Eight Bridges and is now served on tap at Woody’s. Kurt nostalgically recalls, “That particular recipe has been a constant companion throughout my career, initially brewed in 7-gallon firkins. Over time, Celia’s has undergone transformations to become the beloved brew it is today.” Available exclusively on tap at the brewpub.

Inquiring about Kurt’s preferred beer styles for brewing at Woody’s, he promptly identifies their Oma’s German Pils as his top choice. Kurt considers this classic German pilsner as a tribute to his family’s background and his fondness for the invigorating characteristics of the genre. The original recipe development for the Oma’s Pils was the brainchild of Pat Wlodarcyzk, Woody’s original Head Brewer. It is celebrated for its pure flavor and seamless conclusion. Available both on tap and in 16oz. 4-pack cans at the brewpub and select retailers in Redding and Shasta County.

WOODY’S BELGIAN-STYLE BEERS

Kurt brews a selection of exceptional classic Belgian styles. Among the picks are the Belgian White Ale (Belgian-style Witbier), Golden Eagle Ale (Belgian-style Pale Ale), and the Falkor (Belgian-style Golden Strong Ale). Setting Woody’s apart from other Redding breweries is Kurt’s dedication to crafting beers in these traditional Belgian styles, known for their intricate brewing processes, especially in terms of fermentation precision akin to that of Pilsner beers. Embracing innovation, Kurt presents a unique take on Belgian-style beers that has garnered much appreciation among Woody’s customers.

The Belgian White Ale at Woody’s adheres to time-honored recipes, featuring a harmonious blend of herbal, spicy, and citrusy flavors derived from coriander, curacao orange peel, and aromatic spices. This medium-light to medium-bodied ale exudes bready, grainy, and zesty citrus notes, perfectly complementing various food offerings at the brewpub. A crowd favorite, this refreshing brew is exclusively available on tap.

In contrast, the Golden Eagle Ale embodies the essence of a Belgian Pale Ale with its distinctive toasty, biscuity caramel malt profile, accented by floral hop aromas and a subtle interplay of fruity and spicy notes from the Abbey ale yeast strain. Medium-bodied and well-balanced, this ale leaves a lasting impression with a blend of malt sweetness, hop bitterness, and yeast-derived flavors. This delicious Belgian-Style Pale ale was developed in collaboration with the Grindstone Cigar Club in Redding which Scott is a member of. You can grab this gem in 16 oz. 4-pack cans at the brewpub.

Last but not least, my unequivocal favorite from Kurt is the Falkor Belgian Golden Strong Ale, known to vary in ABV between 9.5% to 10.25%. I had the pleasure of savoring a robust, aged batch with rich complexities that showcased Kurt’s unique twist on the traditional style. Blending characteristics of a Golden Strong Ale with hints of malt sweetness reminiscent of a Belgian Tripel, this ale exudes fruity esters, spicy phenols, and a long, enveloping finish that beckons you for another indulgent sip. Another best seller, this rich, warming brew is available on tap at the brewpub.

With each batch of beer he brews, Kurt pays homage to his family’s legacy and the time-honored traditions of brewing. And as he continues to push the boundaries of what was possible in the world of craft beer, Head Brewer Kurt Heuer cements his place as a true artisan, leaving a lasting impact on the beer industry for years to come.

As word continues to spread about Kurt’s exceptional brews, Woody’s Brewing Company is increasingly becoming a popular destination for beer enthusiasts from near and far. Kurt’s dedication to his craft and his commitment to quality shines through in every pint that is poured, earning him a loyal following of fans who eagerly await his next creation.

As he approaches his first decade in the industry in May 2024, Kurt continues to reflect on the challenges, growth, and triumphs that have shaped his remarkable journey as a professional brewer.

“Being a brewer is awesome… I love what I do every day!” Kurt proudly exclaims.
